As I mentioned in an earlier post, I don't really get too involved in "dressing for cycling." A lot of people use a lot of cycle specific clothing and that's ok, but I do more on my bike than just ride around in circles real fast. There are devotee's of the sport who wouldn't be caught dead without some very expensive and revealing spandex on when they ride. I don't really see that it's necessary. During the winter, I wear an all purpose base layer (aka. longjohns)under jeans or slacks, a long sleeved sport shirt and a fleece jacket. The only additional cold protection I use is a pair of convertible mittens:
They allow your bare finger to be exposed whenever you need them
and very simply cover them for warmth when you don 't. Made of Thinsulate these do a great job of keeping the hands warm, provide extra visibility in traffic and only cost a 5-10 dollars at the local discount/or hardware store.
I also where a bakalava type of head gear, this one is made of Polartec and is called a Headsock.
I generally don't wear it over the head because it simply gets too hot, but provides great protection for the face and neck in the wind. All together it is pretty simple to stay warm without looking like a "spandex hamster" run amok.
